Caramelised Banana & Peanut Butter Oats


A quick and energising Winter breakfast to satisfy that sweet tooth!

I have to admit that oats are definitely one of my favourite things to have for breakfast, I mean I could have them EVERYDAY! Not only do they keep me full for longer periods of time compared to other breakfasts but combined with the right ingredients I find that it can really put my day on a good stead when trying to eat better.

This quick and simple breakfast will have you feeling full and satisfied until lunch.


Ingredients

- Organic Whole Rolled Oats (or whichever oats you prefer) 
- Banana (I find one decent size banana is plenty)
- Peanut Butter (I use Meridians crunch peanut butter as it s 100% peanuts and no other nasties but of course you can substitute with whichever you prefer)
- Coconut Oil (I use this to caramelize the banana with - my favourite is Lucy Bee) 


Method

Oats
Cook oats as per instructions, measure the same amount of oats you usually would - I tend to use about a 50g portion for myself and cook mine on the hob with about 200 - 250ml of Blue Diamond unsweetened Almond Milk. 

Banana
I cut the one banana into medium slices. I leave 6 to 10 slices to the side to caramelise and top my oats with when they are finished and then cook the other remaining slices into my oats. This adds a little but more bulk to the oats, sweeter flavour and a different texture.

Caramelize 
I preheat a small milk pan for this and add about half to a full small teaspoon of Lucy Bee coconut oil to the pan once preheated and then add my banana slices to the pan. Sometimes I add a sprinkle of unrefined muscovado sugar to the oil to give it extra sweetness but often find the coconut oil does the trick by itself. I cook the banana slices for about two minutes on each side or until they start going golden and almost soft - this ensures that they have that really sweet almost caramel flavour. 

Topping 
You could go crazy with different combinations but I am really loving the flavour combination of the sweet, soft banana with the crunchy almost salty peanut butter. 
Present any way you want and dig in!

  2. This looks delicious! I have been loving oats/porridge recently so it would be great to try the caramelised banana with it, as I usually just have fresh chopped banana with mine x
